FOOD 101 - Introduction to Food Studies

This course introduces students to the interdisciplinary field of global food studies. Students will study food through a variety of historical, cultural, environmental, and sociopolitical lenses, emphasizing food justice movements and critical approaches to race, power, and privilege. Focusing on methods traditionally belonging to the humanities and humanistic social sciences, the course will also cover the ethics of and best practices for community engaged learning, a curricular approach that connects classroom learning goals with civic engagement. Assignments will include experiential learning opportunities.
